Fermentation : Promotes the growth and life cycle of good bacteria to transform the flavour and shelf life of ingredients.(Sauerkraut,shredded cabbage with some salt and pack it into a container)

And there are many variations of sauerkraut recipes and even more for pickling things like green beans and snow peas carrots and "baby corns" as well as cucumbers of the which bread and butter slices are my favorite, perfect for sandwiches, which is why they are named so. Great idea Jeremy!
